Super Simple Blackberry Cobbler

December 29, 2020

Ingredients:

  • 6 cups Blackberries
  • 1.5 cups Sugar
  • 1 tsp Vanilla
  • 3 Tbsp Butter, melted
  • 1 Tbsp Sugar

Instructions:

  1. Preheat oven to 350°
  2. Rinse blackberries
  3. In a large bowl, combine fruit, sugar, and vanilla
  4. Gently stir to mix well
  1. Let sit for 20-30 minutes to allow time for syrup to thicken a little.
  2. Grease a large casserole dish with cooking spray or butter
  3. Pour fruit mixture into pan
  1. Cover with strips of pie crust (see note below)
  2. Brush melted butter onto crust strips
  3. Sprinkle sugar on top of butter

11. Bake for 35 – 45 minutes or until crust is baked through and golden brown (see photo at top)

Without a doubt, this cobbler is best served with homemade ice cream! Here is our family’s recipe in case you don’t have one of your own:

Note: If you are in a time crunch, you can always use refrigerated pie crust cut into long strips.

But…if you have a little flexibility in your day, here is a wonderfully easy pie crust from my sister-in-law’s precious mom. It makes enough for 2 pies or 1 cobbler:
